A staple of Southern holidays are the chitterlings, pronounced chitlins.
Growing up, most Southerners ate souse and scrapple and chitlins made from animal parts. Souse is of course a cheese made from pig brains. It's eaten as a cold cut and is in a jelly of sorts, made from the natural gelatine of the meat I think, although I'm sure they had to add more.
Some of the boxed sandwich brands sold souse as part of their product line. Now it's totally out of style and I wonder if any brands are still selling it. I put up with it as a kid, but that's about it.scrap metal(pig brain) is a different story though. Cooked well, it can be tasty, but the idea kills most taste buds.
In the South, chitterlings (or chitlins) were primarily eaten by servants as they received the entrails. With the new awareness of soul food, these brands are suddenly becoming regional favorites, a kind of delicacy. Chitterlings (pronounced chitlins) are still popular, although they don't appear on many restaurant menus. However, there are strong brands, each with a following in different parts of the United States. Note: They must be cleaned and authorities recommend that they be boiled to avoid dangerous bacterial contamination. You are a pig gut after all.
Here are some of America's most well-known chitterling brands, in no particular order.
- Onkel Lous Super-CleanChitlins hail from Cincinnati, Ohio. The stamp dates back to 1887 and comes from a non-Southern perspective. The website states: “As chitlin users know, preparing chitlins has always been a very long and arduous process. Typical chitlins take a long time to clean and end up with very little usable product. "Uncle Lou" has created a chitlin that takes very little time to prepare and cook."
- ChicagoMuh & Oinksells chitterlings, all cleaned by hand, which seems to be a new culinary standard. They sell them in buckets of five and ten pounds. For a 4.5 pound weight, the fat and membrane are completely removed. They say, “Everyone has a favorite chitlin recipe. Some like them boiled, some like them deep fried - but everyone likes Moo & Oink Chitlins.
- and Shaunais a genuine African American brand of Chitterlings. Shauna's hand cleaned Chitterlings are sold nationwide but are based in Maryland.

Pre-Cooked Queenella Chitterlings. Don't buy them, they are not clean, these cutlets are cooked improperly. This Queennella company should be sued for false advertising. I grew up on a farm where we slaughtered pigs and my mom would clean chitlins by running a water hose through them to turn them inside out and then removing all the food waste from them. I don't remember her taking out the fat and they were very flavorful and flavorful.
I recently decided to add chitlins back into my diet and while shopping another shopper told me Aunt Bessie's was the best. I took your advice and found that they are almost immaculate inside.
The next time I went shopping I decided to save about $3 and buy Uncle Lou's. They weren't as dirty as some have reported here, but I had to spend about half an hour sorting through the small specs and excess grease. However, they were delicious too.
My verdict is never to buy anything but Aunt Bessie's. You save a lot of time.

I usually get Uncle Joes at Price Chopper here in Watertown NY but due to covi the ceo staff have been ill for almost a year. I bought some Queenella Chitterlings and they were the worst I've ever seen. There was nothing in the bag but things to throw away. I had more than enough pork butts and not enough chitterling to eat. They weren't really half clean and not enough food for 3 bags. I thought they were pre-cleaned. Today I started making my Queenella Triple Clean Chitterlings and I am very upset and disappointed to find that there is nothing but junk. What should have been chitterlings were little torn streaks. Over the years, my family has rotated between the Uncle Lou's and Queenella brands at Chitlins. Although the brand claims the product is triple clean, you have to go through each strand. Not everyone grooms chitlins the same way. Really anything is better than buckets full of garbage. We had 70 pound chitlins with both brands last Thanksgiving. I keep hearing about Aunt Bessie's house. I'll try them for Christmas and post an update. I would also like to try the Gourmet brand. My mom saw a brand called Audie's and bought 1 bag. Please don't waste your time or money. These are the whitest chitlins I have ever seen. They're pretty clean... probably bleached. The chitlins had neither flavor nor substance. I was trying to research the company so I can personally send a letter about the product. If you're a serious chitlin eater, this Audie brand is not for you and a joke. I am a very disappointed customer. I spent over $100 on their Thanksgiving Pre-Clean Chitllings. When I started searching them, there was nothing in the bags but junk! I'm 55 and have eaten chitterlings on vacation most of my life, but I was afraid of having to empty out several buckets to have enough to sample. Reading the top 5 brands list made me wonder where AUNT BESSIE is. So I wondered who made the list. Well it doesn't matter because Aunt Bessie's Chitterlings are by far THE BEST and CLEANEST. That's my opinion, but I see that many here agree with me. I bet if someone tries Aunt Bessie they will love it and get her every time. I remove the little fat on it under cold running water and then clean it again under cold running water. The third and final time, I wash them under warm running water. And that's it. I've tried all the brands listed and none of them are good. Once you try Aunt Bessie's you will never try anything else. I take a small knife and cut one side, then clean and rinse. I timed it and a five pound sack can be cleaned in 15 minutes or less. Everyone I've told about Aunt Bessie now only wears her and nothing else. Try just one bag and you will be satisfied.

I bought Queenella Chitterlings for Thanksgiving, biggest mistake I've ever made. I'm not sure how they determine how much goes in a bag or bucket, I assume they weigh it. I came across a bag with a rectum and two boobs and they were as dirty as ever, I didn't even take a serving plate from it thinking the above items were taking up the weighing space. I've tried many pre-cleaned chitlins that were nowhere near clean and based on these reviews I decided to try the Aunt Bessie brand. OH MY GOSH! They are really clean. I agree these chitterlings don't look normal, where do you find chitterlings that are all the same size? They look more like mangoes than chitterlings. Having grown up in the country I know what they must look like and Aunt Bessie's don't look normal. Uncle Lou's chitlins are terrible. Likewise, I spent over five hours with three bags and they were just as dirty and difficult to clean. They also had a lot of dirt on them which made them very difficult to clean. My hands are so cracked and I have repetitive strains on some of the injured fingers I have. My neck is stiff and my feet hurt from standing still. I could scream because I was so busy I couldn't finish. I won't forget that, and somehow I want everyone to know they're hideous! I was misled by this article stating they were the best of five different brands. I should have bought Aunt Bessie's!

I used to clean chicks in the bucket before the sack chicks came. Over the years I have tested various brands of bagged Chitterlings and have found that Aunt Bessie's are REALLY the cleanest, the company sticks to what they advertise on the bag....... "Just rinse and cook".

I usually buy 'super clean' Chitterlings from 'Aunt Bessie' to clean and cook for my family during the holiday season. THEY ARE THE BEST!! Very, very little crap and they are very tasty on top of that.
This year, however, I took a chance and bought the super clean Chitterling from Uncle Lou's - (the store I went to didn't have Aunt Bessie). Well, I KNOW that we (the consumers) need to go through and clean even the cleanest chiterlings before cooking just to be sure, and I expect some of them need extra cleaning. But Uncle Lou's Super Clean brand Chitterlings (I bought 15 pounds for $5.99 per 5 pound pack) is the worst thing I've seen in my 45 years of life!

Queen. Chitterlings are the worst. I don't eat them, but my great aunt used to butcher her own pigs. So I know the waterskin and everything. Queen chicks must not falsely advertise that they are triple primed. I cleaned 2 bags for my husband and his dad and when he came in and said "why didn't you buy more than one?" I bought the Aunt Bessie Chitterlings and had to clean them. They don't take off their membrane. I didn't mind, but it resulted in fewer chitterlings.
I also bought the Chitterlings from Moo & Oink and can't wait to see what they look like.

I bought a 10 lb bucket of Smithfields from Kroger and there was more scrap than usable meat.
The bucket says 10 pounds, if you thaw it you'll have a full bucket of water and about 7 pounds of product; After cleaning, you can get 3-4 pounds. It's not worth the price. I put them up for sale for $8:00. I should have bought a different brand at the regular price.Loading...

I got in touch with the company headquarters today. I am a consumer of Queenella brand Chitterlings. I bought 6 packs yesterday at Walmart in Atlanta, GA. The packaging obviously and falsely advertises sink, cook and eat in a 5lb bag. However, I have several problems with these statements: – Chitterlings are not fully cooked and eaten. If I had just washed up, cooked and eaten like the package said, my entire family would have been taken to the emergency room. These chitterlings are dirty, with all sorts of junk in the package. - The packaging also states 5 pounds, which is also brazenly and incorrectly advertised. The package contents weighed just under 3.25 pounds and another package weighed just under 3 pounds
Moo & Oink cleans chitterlings like I would, they contain no debris, hair, grease, membranes or anything other than clean chitterlings. They're just expensive. But it's worth it. Too bad they're not in Atlanta.

I bought four bags of their Chitterlings Queenella Triple Clean. Three of the four bags were not clean and out of the three I had to clean two bags like they came out of a DIY bucket. Each bag had LOT 0016.
I paid $6.99 plus tax for each and find it unfair that the product does not match its label.

I have never been so disappointed with Queenella Chitterling pre-cleaners. They are not ready for rinsing and cooking. I bought 5 bags and they were no different than regular ones. I think one bag got mixed in with the trash because most of the bag was testicles and trash. In this bag I found ONE usable chitterling. However, all other pouches contained many testicles. When companies state that their chitterlings are pre-cleaned, they must state that they are pressure cleaned, which means the innards have been inserted with high-pressure water to remove most of the debris. Aunt Bessie is the best pre-cleaner I prefer, but you still need to separate the gut lining from the gut for a step-by-step guide on how to clean and cook chitterlings. Hope that helped. God bless.

I started buying Aunt Bessie's Chitterlings (frozen in the bag) when I lived in South Carolina. They are absolutely clean and unbleached! All you do is rinse and cook well. It appears that the entire intestine is left intact in pieces of about 6 to 10 inches. You have to rinse it under running water and then turn it over and do the same. I never had to do more. The problem is that you can usually only find them at IGAs in the south and a few KMART supermarkets (if you can find one) in the north.
The Queenella brand is bleached and therefore tasteless if you throw most away. Uncle Lou also needs cleaning and both markers are ripped to pieces.
Any suggestions on how to convince the meat counter managers at the IGA stores here in Ohio to order Aunt Bessie's? I am sure that someone who loves chitterlings but hates grooming them will never buy anything again. I want to stop taking 2 coolers to South Carolina when I leave.

I also really like Aunt Bessie's Chitterlings, but you have to remove the membrane. They are very clean and unbleached, but the membrane is still intact and must be removed before they can be thoroughly cleaned and cooked.

My advice to anyone who eats chitterlings, a true chitterling eater would tell you that there is no such thing as pre-cleaned chitterling. All chitterlings have a layer that needs to come off. Even if you don't see any coins (mess) on the chitterlings and they look pristine, you will need to remove the fur from them and they will then be cleaned. I just cleaned 40 pounds over Christmas and they are immaculate. Enjoy
